Originally from Isère, France, Gaëtan Thiron has mainly been educated in Michelin starred restaurants such as La Pyramide (in Vienne, France), La Côte Saint-Jacques in Yonne (Burgundy) or Georges Blanc, in the department of Ain, before diving in 2002 into the world of Dominique Gauthier, at Le Chat Botté in Geneva.
In 2004, Gaëtan Thiron took his place in the kitchens of the famous Lion d'Or in Cologny.
In 2011, he ran the most renowned restaurant in Carouge, L'Olivier de Provence, where he served a cuisine full of finesse and delicacy.
In 2016, life and its positive twists, guided him to the Comedie which was to be transformed into Le Philanthrope. Alongside his loyal partners Gaëtan took on the direction of the restaurant.
In this beautiful “maison gastronomique”, he takes pleasure in creating a delicious cuisine thanks to local and seasonal products. He also developed a close relationship with local producers whom he has known for several years. For the Chef, the respect of excellent local products is translated into original seasonal menus. The imaginative menus spotlight and awaken flavors and delight the taste buds, all served in a atmosphere of conviviality!
Born in Val-de-Loire, Benjamin Marais was trained as a sommelier. Over time, he has embraced responsibilities for management and team management.
Having arrived in Geneva in 2008, he acquired skills in this new field of activity and forged a recognized experience in restaurant openings; First, at the Grill, the restaurant of the famous Hotel Kempinski and then at Bayview, the restaurant of the Hotel President Wilson.
In 2013, he was recruited to take the direction of the “dining room” of L’Olivier de Provence. Since then, he has worked closely with valuable collaborators like Maurizio De Matteis. Together with other motivated team members, both in the kitchen and in the dining room, they form a professional and amicable brigade, at your disposal to serve you fine and gourmet dishes, to advise you of the best food-wine pairing possible and of course, to offer moments of joy around the table!
The genesis of Le Philanthrope in a few words ...
The birth of Le Philanthrope is a beautiful story. Born one day in 2013 in a way that is as unexpected as it is surprising. Does life not always bring surprises? Changes at L'Olivier de Provence in Carouge accelerate a transition process already underway. Thoughts are racing: does not every restaurateur dream of running his own house? Gaëtan and Benjamin, friends and long-time professional partners, then dare to make the choice to embark on the adventure that is offered to them, with the help of former faithful customers. And everything is accelerating! La Comédie becomes The Philanthrope, a place where gourmets can delight in culinary discoveries, in a convivial environment and simply to have a drink. Together with their partners, Gaëtan and Benjamin welcome you to share their passion for cooking, good wine and especially for sharing happy times together.
